Like many kitchens, commissaries are often challenged with having adequate skilled labor and ensuring that employees follow through with proper equipment cleaning and sanitizing after use, said Carolyn Bilger, director of marketing, Hobart Food Prep Equipment.

“These kitchens also may struggle to provide the proper training in the first place due to time constraints associated with being short staffed. Employee turnover can compound that problem. These challenges, however, are on a larger scale since these kitchens produce higher volumes of food and tend to have more equipment.”

Hobart slicers feature a removable blade that can be easily cleaned in a sink or dishwasher, Bilger said.

And its Legacy+® mixers have a removable bowl guard and stainless-steel bowls that are also dishwasher safe. All agitators are easily cleaned in a three-compartment sink.

Hobart’s FP300i floor model continuous feed food processor, which is commonly found in commissaries, has removable stainless-steel parts. The cylinders, push feeders and cutting tools can be thoroughly cleaned in a dishwasher.
